My Favourite Recipes

One of the advantages of living in this part of Australia is that we have ready access to fresh produce.  We also live in a community where it is still the norm to eat at home.  As a result we have some great cooks producing delicious meals.

The following recipes include some “golden oldies” as well as some newer delights.

An easy pancake mix

Pancakes are one of those “comfort foods” that many of us can’t get enough of.  They are simple to make (if you have the right recipe) and quick to prepare. 

They can be eaten either as savories or as sweet treats, and this recipe can be used for both.

It is a two-part recipe: the first part is for the preparation of the basic mix which you can prepare in bulk and store for later use.  The second part covers how to use the bulk mix to quickly prepare a delicious batch of warm pancakes.

Basic Mix

Add 600 gm (four cups) of plain flour, three tablespoons of baking powder, two teaspoons of bicarb of soda, a teaspoon of salt and 40 gm (1 tablespoon) of caster sugar to a large mixing bowl.

Mix thoroughly and store in an airtight container.

Savory Pancakes (canapés) (serves four)

Mix one cup of the basic mix with a cup of milk, one large egg, lightly beaten and a tablespoon of melted butter.  Add a half teaspoon of vegetable salt, a couple of grinds of black pepper and a pinch of chili powder. Mix with a whisk until the mixture is combined.  Do not over mix.

Heat your frying pan then lightly grease with butter wiped on with a folded piece of paper towel.

Drop teaspoonfuls of the mixture into the frying pan.

Turn pancakes once bubbles have appeared then cook for about one minute on the other side.

Serve hot with your favourite dip or savory topping.

Sweet Pancakes (serves four)

Mix one cup of the basic mix with a cup of milk, one large egg, lightly beaten and a tablespoon of melted butter. Add a teaspoon of golden syrup or honey.  Mix with a whisk until the mixture is combined.  Do not over mix.

Heat your frying pan then lightly grease with butter wiped on with a folded piece of paper towel.

Drop tablespoonfuls of the mixture into the frying  pan.

Turn pancakes once bubbles have appeared then cook for about one minute on the other side.

Serve hot with your favourite jam and whipped cream.

VARIATIONS ON A THEME

Banana Fritters

Thinly slice one medium sized ripe banana and add it to the  beaten sweet mix.  Cook as above then sprinkle with cinnamon and/or nutmeg.

Serve with cream and/or ice cream.  Delicious!!

Meat Fritters (a great way to use leftovers)

Finely chop up any leftover meat (lamb, chicken, roast beef, corned beef are all good)  and add it to the beaten savory mix.  If you have any leftover roast vegetables, chop them up finely too and add to the mixture. Corn kernels (well-drained) are good too.

Cook and serve with your favourite sauce (and some oven-fried chips as well) for a delicious low-cost meal.

Pseudo Crepes

Add an extra quarter cup of milk to your mixture to produce ultra-thin pancakes. 

Be careful—they cook really quickly.
