One of the advantages of living in this part of Australia is that we have ready access to fresh produce. We also live in a community where it is still the norm to eat at home. As a result we have some great cooks producing delicious meals. The following recipes include some “golden oldies” as well as some newer delights. |

Honey chicken with salad greens Serves: 4 Prep Time: 15 mins Cooking Time: 5 mins Ingredients: 600g skinless chicken breast 1 cup cornflour ½ teaspn baking powder 2 egg whites, beaten Ice cold water Extra cornflour for dusting chicken ¾ cup of clear honey 1 ½ teaspoons sweet chilli sauce Spring onions for garnish Mixed salad greens with no dressing Method: Cut chicken into bite size pieces. Melt honey and chilli sauce in saucepan. Make a creamy batter of cornflour, baking powder, beaten egg whites and cold water. Dust chicken pieces with cornflour and dip into batter. Deep fry for about 1 minute until crisp and cooked through. Arrange salad green and some chicken pieces and drizzle with honey chilli sauce. Garnish with spring onions. |
